Where it all began... Growing up in the Sierra Nevadas, Joe had a love of driving vehicles beyond where a rational human would go. He and his friends created the "High Class WT" motor club and their modified vehicles proudly displayed the sticker ... until they had to grow up and get real jobs. But the spirit of HCWT, as we now call it, lives on in the sauce!

When Joe was in college on the Central Coast, his parents delivered ice chests of tri-tips to his apartment when they visited (often on their way to the beach). He created his HCWT sauce from the limited selection of ingredients present in their bachelor pad. This recipe was so sensational as a tri-tip marinade that we still use it today -- and not just on tri-tips (see recipe page)!

What you can't see in the photo of Joe shooting skeet is the glass of Pinot Noir he enjoyed on the deck afterward. (Definitely not during; there's some kind of rule about that, right?) All we're saying is, there's a little part of us all that wants to let our muffin tops free while we drink Champagne and play cornhole on a yacht. And now you understand HCWT!
